Remove the turkey parts when almost dry, add stock to deglaze and get ALL the fond. Blitz it so it's smooth and reduce to half.

Gravy base... Take the giblets and neck out, put carrots, onions and celery (diced) in a pan with cracked garlic. Get the veg fragrant and add the turkey parts. Cover with just enough chicken stock. Let it simmer down until almost dry so you have fond.
