I covered for an American customer support engineer for a couple of months back in the day.

In Belgium, they ask whether you want the duck rare or well done. Medium is slightly translucent in the middle. Not the same risks as chicken apparently.

Defrosting: seal in a plastic bag, into a sink of warm tap water for 30 min. Seems to work on most of the things hoiked out of the caravan freezer this last couple of years.
