I would do a half-log cabin and then rotate a 3x4 block set up. If it’s not long enough, I would use the strips to add borders at the top and bottom.

How about a log cabin block? Cut the fat quarter as large as you want-15”x15 ( for example) then take your jelly roll and sort it to coordinate with your fat quarters. If you have a lot of fat quarters, then maybe do 1/2 log cabin blocks. I would figure out how big do you want your quilt?
