Getting to see the Northern Lights crossed off the bucket list last night!

Silksong complete! At least as far as beating the last boss (3rd ending). I don't feel the need to seek out all the pins/charms etc or do a crazy challenge mode.

Great game! Just 2 bosses I thought were a little over the top, but otherwise great world to explore and I loved the music and story.

Based on the article I read, Ishizaki, the director for this, was given a chance to do his own thing. Sounded like they were giving a new director a shot at something new. Probably (hopefully) doesn't mean this is somehow their new main focus.

Beef barbacoa tacos, tried a different pickled red onion method of using just lime juice and salt instead of the more common vinegar based pickling solution. The lime version is sooo much better for Mexican cuisine!

Some salsas I made recently. Tomato based roja, a dried arbol and guajillo roja with roasted garlic, pure guajillo and garlic verison, roasted tomatillo verde and a roasted habanero garlic lime. The guajillo and garlic one is a surprise fav, super fruity and deep flavor with a medium to mild heat.

Salsa verde version and the cheesy dry fried verison came out best I think! The verde had a bright, more acidic flavor that cut through the rich carnitas and the cheesy one just doubles down on the decadence that's super comforting

Today, I was trying different homemade salsas on carnitas tacos, as well as a cheesy dry pan fried verison. Everything homemade except for the tortillas. Salsa roja with arbol and guajillo chiles, salsa Mexicana, and one with a lime crema.
