Her post-Clone Wars identity has always been "I am no Jedi" so she had always been allowed to be more expressive. Maybe after her confrontation with Vader something broke. I hope we get some backstory.

I've noticed the shift in Ahsoka's demeanor as well, I'm guessing age and the events of the Rebellion played a part. We have 5 more episodes to get some exposition.

There are real conflicting issues with incumbency, term limits, age discrimination, and the lack of any means to remove incompetent office holders. I have been persuaded that term limits are bad, and age discrimination is wrong, but then you end up with Feinstein and McConnell.
