My first time trying this method of cold smoking cheese. I used the little smoking chimney that is fueled with wood pellets. You can see it in the bottom of the BBQ under the rack of cheese. 2-1/2 hrs smoking, wrap in parchment paper for 48 hours. Then air tight sealed for at least 2 weeks.

Had a great time with my lovely and talented wife last night at #RelingerFarms concert venue for a night of bluesy rock. It was an all Australian line-up with The Paper Kites opening for The Teskey Brothers. Go see them - you won't be disappointed.

I had a Grand Day Out with my daughter last Friday. I don't mean to brag, but she was gracious enough to give me some of her original art. This little guy shows up in a lot of her notebooks, getting cards and other doodling places. And now we match!
