That's a gross mischaracterization. Finn wants to run away from everything and is not loyal to anyone. He learns that there are people important to him, that he needs to fight for and not run away. Sure it could've been more interesting but the character is still decent.

Well the movie was shot to be 3 hours long which is why the editing/pacing is a mess. This fight scene was definitely way longer and I think one of the stunt men even confirmed it.

Dude, Boba finding Han is also identical to Vader finding them on his own as he could've easily sent agents on all the nearby planets (which Bespin was).
The knights are set as henchmen and that's what they do.

There were never any storylines for them apart from having more fight scenes and being Kylo's henchmen. One gets killed by Rey in DotF and that's it.
