I am not an advanced game programmer, but I am pretty sure if you add separate checkpoints with reference points for AI only, then you can probably get a better result.

Also I do suggest looking up reference images of a car if you have not already to get higher accuracy of the model, also start with getting your topology (look up what a great topology looks like) to look good, because once you get a habit of making it terrible, it will be hard to get out
