Honestly a stab in the dark but I'm willing to bet it's the fault of the French language somehow.

Just realized that a good way to clarify how to point at a single cow and use "cattle" is that since viewing them as property is a part of the word's context, it's never "a cattle" because it's always "my cattle"

...or "your cattle"/"their cattle"

Interestingly, a similar word that split off from the same origin does work as a singular noun and then add an "s" for plural but also works like cattle as a group noun without the "s," so there is an argument to be made that we could've used "a cattle" and "cattles" but we kinda just don't?

Since it evolved from a word referring to movable property it seems to be a word meant to refer to a group of things, but can be used to refer to one as tho it's a group numbering one. Tho for a lot of specifics you'd mostly just be left saying what bovine you mean instead.

*Looks it up* Kinda seems like a yes and no situation tbh. Like... Cattle is used the same for one cow as it is for many, but it seems to remain plural. A person can be said to be "working cattle" even when there's just one bovine or a thing can be said to "promote cattle growth" for your one bovine
