Abbaye de Belloc. Possibly my favorite Basque #cheese. Basque cheeses are typically (not always) sheep milk, lightly washed-rind, and aged roughly 6 weeks - 6 months. This cheese is smooth, buttery, notes of fresh baked baguette. Similar to Ossau Iraty, but made in small batches.

I come from a theater/showbiz family, and it definitely shows when I'm talking about the French oral "history" of how blue cheese was discovered.
