Keto Pork rinds encrusted chicken strips, with added spices because I didn't care for this brand. I soaked the chicken overnight in heavy cream and 1 teaspoon white vinegar to emulate buttermilk.
Deep fryer on this one. Dunked in Sweet Baby Rays no sugar Honey mustard and Arby's horsey sauce (new!)

Roasting them takes the edge off and they really are closer to potatoes than radishes.
I have also boiled them and used them to create a wonderful keto potato salad.

It is hard to make keto fruitcake when you can't have flour, sugar or fruit! I was able to take a random keto cake recipe and adapt it. I used lemon, lime and orange peels and threw the fruit away 😆I used food coloring to make them look as fruitcake as possible. Also I added rum and walnuts. Perfect
