The Shure MV7X is a dynamic microphone; dynamic mics typically require more gain than condenser mics. You may need to adjust the gain on your input knob, but you can also try supplying additional power via the 5V power input on the Scarlett, or consider using a Cloudlifter or similar device.

A converter isn't required. Perhaps the port isn't able to supply the required 1.5A USB-C power? Scarlett are class-compliant devices, they use Apple Core Audio on Mac, not a proprietary driver
