Drinks-wise, any place you walk into will generally be a good time especially if its your first time in the country. In Dublin, there some great spots on both the North & South side. Some of my favs would be Walsh's, the Flowing Tide, the Confession Box, Grogan's, Fidelity, the Big Romance, and more

Food-wise, Ireland does other culture's cuisines EXTREMELY well. If you look around you can have some of the best Vietnamese, Italian, Turkish food etc etc. For a fancier dinner in Dublin - I'd recommend Host, in Ranelagh. You will probably need to make a reservation but quality food and good value.
