I’ve been a mushroom hunter since I was 15/16 … more than 20 years now. To eat I love shiitake, just make sure they are fully cooked (all mushrooms should be eaten fully cooked but esp those). To me they are just sort of magical and special. I also am very fond of chanterelles.
