The donut shaped heat is a real bummer. But it’s strangely perfect for boiling spaghetti.

I could reliably do eggs in cast iron on the industrial cooktop. Then I switched to a cheap induction wok (donut-shaped hot spot) and am starting all over. Today’s scrambled eggs with sautéed onion and cream cheese did not stick.

Shrimp has a great texture. Custard. Chewy stuff like dried fruit. Seeds & nuts.

I need you two to stand by my kitchen window and explain to me what’s happening out there.
