Most food banks have a collection arrangement with groceries for things past their prime but still safe to consume. Certain items, like meat, must be frozen for food safety reasons. The grocery gets a donation deduction, so it’s a win for them too.

Broiler chickens are younger when they go to market and less susceptible to disease. Laying hens are kept longer, and like humans have lest robust immune systems over time. Wing prices are largely a function of current demand per my butcher.

Food banks get donations from mfg overruns they only have to pay freight on. That is often where cash donations are effective. But, a semi full of cereal is not necessarily workable for a small food pantry. (Some smaller sites have coop arrangements with food banks if they are near major cities.)

You can the flesh. Pop it out of the skins, mash it and package as airtight as possible before freezing. Not quite as good as a good fresh avocado, but very serviceable after seasoning. I worked in a restaurant long ago where we got very good frozen guac for burgers.
