I haven't done that but every time I sign for a parcel at the post office (which happens a lot as I live in a town with few shops), I give an entirely different signature.

Yes, they can. Every time you land in the US you have to go thru immigration - they don't have the same "transit" area at aurports rhat ither countries do.
