So upgrade your extractor to the highest possible - they’re quiet - and have it linked to a motion sensor rather than the light switch. High level moisture extraction in the dark.

You shouldn’t really get condensation on the inside of your windows, winter or not in a flat of the age, apart from maybe in the bathroom when you’re showering. They’re designed to not have cold spots on them. If it’s not too serious, a dehumidifier is probably a fair solution.

Dehumidifiers are fine, but you are treating the symptoms rather than the root cause. Depending on the age of your apartment, you should check the quality of the extract fans in the bathroom and kitchen. If they’re not modern, they’ll likely be ineffective and they’re a cheap upgrade.
