It could be an interesting worldbuilding decision to free up most of the population from farming if magic is widespread enough. Spells like move earth, create water, and mage hand could significantly improve farm productivity. Perhaps argrimagic is a good career in your world!

If your setting is vaguely medieval I'd say most people would be involved in agriculture, around 90%! I wrote a blog post a few weeks ago about mundane NPCs in fantasy settings, feel free to take a look:

I have some tables that enjoy a grittier ruleset, and others that don't.
For what it's worth, my playgroup that wanted lingering injuries found that the rules as written in the DMG were too frequent. I tried my hand at writing some homebrew rules to replace them
