This is a distillery which I can confidently say has a distinct whisky terroir - using local grain, oak, and peat for 30 years really helps hone the style!

After an altitude-climbing drive from Linz (thanks Jasmin!), I got to explore the Waldviertler Whisky JH range, including 18 year old drams, smoked expressions and dark rye, plus some lovely food

This year, I've been to DK, FR, IT, DE, CZ, ES, Wales - not to mention a whole host of personal travelling. 2025 has been very busy, and sadly this final trip of the year just fell apart

Apologies to everyone involved in organising this trip with me - I appreciate everything! See you next year👍

3. It Doesn't Matter where Water comes from 💦

Pure mountain springs, what's not to love? But almost every distillery uses reverse osmosis, as the softest water is ideal for distilling

Even adding unfiltered water for dilution, a few mgs of minerals in there = a pinch of salt in a swimming pool

most distilleries have no connection to peat besides the fact their owners like Scotch whisky!

Again, its more interesting and sustainable to use local material to smoke your whisky... Kyrö 🇫🇮 and Fary Lochan 🇩🇰 are surely the best examples of this, but Moon Harbour deserve some notice too 🇫🇷

Examples of people really doing this right include Thy 🇩🇰, Tchankat / Eddu 🇫🇷, Blackwater 🇮🇪, Arbikie 🏴󠁧󠁢󠁳󠁣󠁴󠁿

2. Most Smoked Whiskies Shouldn't be Peated 🔥
Peat is great, but it's a very specific material and (functionally) non-renewable. Its long history in Scotland and Ireland is specific -

1. Single Malts Shouldn't be the Default! 🌾
Single malt is popular for good reason, but once you look beyond Scotland, barley isn't the only choice!

If you want local, sustainable grain, people should consider locally sourced wheat, corn, rye. Why have 00s of distilleries produce the same style?!
