Carnitas in the oven slow cooking and starting to smell really good! Hoping the fact that I forgot to rub the salt and pepper on prior to the oregano/cumin/olive oil and only realised after I had dressed with the onion, jalapeño, and garlic, won’t be an issue. (I salt and peppered the dressing!) 🫣

I loved the summer nights when my Dad would come home from work while it was still daylight. Some of my favourite memories are playing ball in the backyard and playing with our dog.
