So many companies have created vegan-friendly, 100% plant-based alternatives. Almost every dish out there can be veganized now. Garlic “Spam” Fried Rice is a favorite Filipino dish, and making it easy to veganize makes it a dish for days off 😌😴

Ginger and turmeric tea😋 For this, I just did some fresh ginger and turmeric, and brought it to a boil in a cup of water. Strained it over a tablespoon of monk fruit sweetener and added a little oat milk. A nice little remedy for aches and pains.

Today, I accomplished something I didn’t expect: I veganized Dad’s Torta, and he didn’t even feel the need to add ANYTHING else to it. Impossible Foods ground “beef”, Just Egg, and some seasoning.

Pasta Arrabiata w/ Roasted Broccoli, from Thistle. Wasn’t bad, but I did add a bit more to it (nooch, minced garlic and chili flakes). It does have to be heated. So it’s not something you can grab off the shelf and just eat. Turned out pretty good.

A twist on grilled cheese dipped in tomato soup, I decided to go with a (vegan, of course) bacon grilled cheese sandwich, with a side of garlic pesto alfredo to dip into. Turned out surprisingly good, considering what was available at the moment.🤔
