I use a Safari for the same reason, and I like how easy it is to change nibs.
We developed a program-wide no-gen-AI policy for theses and dissertations, and that has been helpful. So far, most seem to understand and agree with it.

One thing I've found helpful is to start by working with the student to develop a detailed timeline. Chances are, it will be their first time doing this too. I usually start with the key deadlines and work backward to schedule the smaller tasks along the way. Helps things seem less overwhelming.
