i see youve already gotten suggestions for totes; it'd be cool to use the fabric as a pocket accent as opposed to the whole thing. Otherwise i love the pencil case or brush holder idea (smth you roll together and tie).

apron? bandanas (big enough for ppl or pets)? trivets? tablecloths?

chinese ground pork patty with diced vegetables inside. i dont eat meat anymore but i dont see why you cant use another ground meat. it does need a high fat content. you dont need to follow a traditional recipe like this one but it helps with the ratios

stir-frying cabbage or lettuce can be delicious too. with lettuce i just use bouillon or oyster sauce as flavouring but you can go very simple.

eggs are also incredibly versatile but idk if they are affordable anymore. i used to make chinese steamed eggs, stir-fried eggs and tomatoes, omelette with shredded protein and veg etc.

rice and beans are a staple for me but rice is getting more expensive. ill stretch rice out by adding lentils, quinoa and beans. flavour with your favourite bouillon if you like and steam it with whatever vegetables you have access to.

any riff on a ribollita (italian) is great. veg stew with chickpeas and stale bread thrown in (i always struggled using leftover bread). heres a recipe from ottolenghi but you can absolutely just use whatever you have access to:
