This is Tenshinhan, a Japanese-Chinese dish with a fluffy omelet over rice. Instead of the traditional Chinese-style sauce, I used a light dashi-based broth for the sauce. 🥚 #😋

In Japan, there's a long tradition of appreciating the beauty of the moon. The egg yolk resembles a full moon, and in autumn, dishes with raw or sunny-side-up eggs, like 'Tsukimi' (moon-viewing) dishes, are popular.

I’m always eating eggs, but it’s been a while since I last posted. How is everyone doing?

Recently, I’ve been into this method of cooking sunny-side-up eggs: quickly frying only the whites at a high temperature, then gently cooking the yolk at a low temperature afterwards. 🍳

There are many egg dishes out there, but all things considered, my favorite might just be Dashimaki, which is a Japanese rolled omelet made with dashi. Having Dashimaki with grated daikon radish for breakfast is truly wonderful!

I'm all about just a hint of green onions and that western Japan broth. 😋

Professional dashimaki (or tamago-yaki) is top-notch, but there's something great about customizing it to our own taste. Today, I added a hint of sweetness using mirin, a sweet Japanese rice wine for cooking, to my dashi-based mix, a traditional Japanese broth. 🥚

Today, I went to a sushi restaurant and had tamago-yaki and egg sushi. While homemade tamago-yaki is delicious, the freshly made one by a professional chef was indescribably tasty!

When I was young, I always wanted to make and eat a lot of noodles made entirely of eggs, but I somehow forgot about it over time. Recently, I remembered and tried it out. Noodles made of eggs, cucumber, ham, tomato, and a boiled egg in the center. The ultimate combination!

In Japan, you can almost always find this type of egg bread at local bakeries. It's bread filled with mashed egg, and it's almost always tasty. I assumed it'd be sold in other countries too, but my friend in Canada told me they don't have anything like it. 😱

I own three types of egg slicers: one for slicing, one for dividing into six, and one simply for halving. Some might think halving is pointless, but I love how easy and clean it cuts. The cross-section looks pretty good, doesn't it?
