My idea behind using cottage cheese was to add a good source of calcium and protein in a whipped cream, while still retaining some sweetness without a spike in blood sugar by using agave.
My idea behind using cottage cheese was to add a good source of calcium and protein in a whipped cream, while still retaining some sweetness without a spike in blood sugar by using agave.
I pretty much used it like ricotta cheese and blended the curds, with a touch of agave syrup for some sweetness, into a smooth whipped consistency.
