For us the magic ratio was approximately half a pound of potatoes per average-sized appetite. Or about 1 medium russet per person. This worked for a meal

I tried to improvise sopes with masa corn flour but, oops they turned out too tough.

Luckily I was able to loosely follow Food Waste Feast’s scrappy bread pudding recipe and turn them into this 😋 casserole, which approximates a tamale pie. So happy with this upcycle!

What ingredients do you reach for to improve a meh dish?

I’ll go first: Last night I needed to use up some tahini so I improvised a fish dish with a lemon tahini sauce. It was OK?
But for lunch today, I added cumin, a handful of raisins & a sprinkle of kosher salt. There we go! Much better 😋
