Thursdays be the bland sister of Tuesdays, NOT! Yesterday's menu was an extravaganza. Cheeseburgers that were total lookers, nests of quinoa promised tongue tranquility. The winner, spätzle w/ goat cheese, red cabbage & walnut made you think it shouldn't work: fireworks ensued. An ISTA10 in spätzle.

"What's the ISTA 10?", someone asked. Here's the deal: Dom & his team are cooking on a budget. Schnitzel plate €6.50, vegan bowl €7.50 Not trivial to deliver restaurant-quality dishes, but from time to time they get it right, and outperform the budget. That's an ISTA 10. Best plate in memory.

Everybody knows, Wednesday is Schnitzelday at @istaresearch.bsky.social! Though not an ISTA 10, it was a source of delight, as well as satiation. Little-known hack though: Wednesday's salad bar features Tuesday's Vegan Bowl left-overs & it blows your mind. Salad is the new schnitzel.

"Vegan bowl" is Tuesday typical at @istaresearch.bsky.social, but it's seen turbulences after cook Tobias's departure left a Toby-shaped hole in the pattern of our taste buds. Today's dish aims for past glory, w/ fried tofu & pomegranate seeds, successful by any other measure than its own past. 8/10

Why "against the odds", you ask? Well, it was a bit wet, stingy on the tomatoes, and came with a "Kaiser" Roll. Mexican't, no way, José, I admit I was skeptical? But the dish was unpretentious; chill as a street dog; growled at me. With the help of some chilli flakes, it surprised me w/ complexity.
Today, we were offered a simple chilli-con-carne. A LOT could go wrong: Under/overcooking, excess fat, bitter (or unpeeled) tomatoes, careless spice, (ONLY chili, cumin, paprika, oregano, coriander, garlic & onion--PLEASE, ftloG!). Dom & his crew didn't do none a dat! Against the odds, I loved it.

Yesterday's carrot cake triggered the birth of this account. It was !spectacular! Made by the cafe's apprentice, this simple tart-style deliciousness was pretty & perfect. Delicate carrot flakes with a bite, in a cake of moist, dense consistency that gave itself up to melting in your mouth. Bravo
