Scientists have basically 'discovered' way to stabilise cacio e pepe 'sauce' with the addition of cornstarch. In other words they have recreated what is already for sale in jars in supermarkets taking away the need for top ingredients and technique. It's the Alfredoization of Cacio e Pepe. Thoughts?
