Continuing to try to eat better as a truck driver. Boneless chicken thighs with stinging honey garlic seasoning and sweet potatoes sautéed in olive oil. It’s a tasty meal, and I think, better than eating in a truck stop.

Who says you can’t multitask while driving? I’m making carnitas in a slow cooker while I move my load down the road. If you are a truck driver, or know one, get a slow cooker for the truck.
