The other alternative and my go to is firm tofu, which I drain, mash, season it with salt, pepper and a little turmeric for color then cook it like you would cook, scrambled eggs.

Before you explore vegan alternatives , what was your experience with egg whites only, like the ones that are premade in a carton? The only alternatives I tried were Just Egg (comes in a mustard looking bottle) which comes pretty close in terms of taste and texture but it’s pricey.

That’s why I don’t eat them. They always taste “gamey “ to me. I suspect what they feed the chickens may have a little to do with it.
