From a quick search (not an expert) the difference is how long it’s left on the vine? — more red = ancho, more brown = mulato

Yeah I have an ok telescope and nice mount — I can do better just not from my parking lot with Bortle 8/9 skies :)

Yeah, we do way worse things and that they came up with a way to save them is kind of endearing — at least CO2 poisoning is painless (for birds too as best I can tell). Meanwhile our Housecats kill billions of birds a year.

This is the “Bochet” process of caramelizing the honey for that batch — a lot of people record the “time” but to me the temperature is what is important, just like in candy making. It also has some homemade vanilla extract added (in a good bourbon)
