First dram of the evening is another of my £1 minis. I've not heard of this distillery in Canada, and I've no idea how old it is.

My eldest son and myself went to an English Whisky co tasting and master class last night. I told the guy who owns the venue that after trying several EWC drams that I'd tasted 999 whiskies. So he pulled out one of the these, and poured a drop, my 1000th whisky tasted 🥃 #1Kdrams

Overall - Another great dram from @bimberdistillery.bsky.social imho. That's 22 of their whiskies I've now tried, and 22 I've thoroughly enjoyed, and if ex PX sherry/Sherry cask drams are your thing, this is definitely one to try. #WeAreBimber

🏁 - The finish is quite long, and spicy all the way to the end. It does develop into high cocoa count dark chocolate, currants, espresso and black pepper. @bimberdistillery.bsky.social #WeAreBimber

👅 - A nice thick mouthfeel, and plenty of spices, similar to the nose initially. It actually anaesthetises parts of my tongue and lips. It's rather rich flavour wise, and nicely rounded. Ex PX sherry cask lovers will enjoy this. @bimberdistillery.bsky.social #WeAreBimber

Overall - I have tasted a few @bimberdistillery.bsky.social drams now, and like the others, it doesn't disappoint. It's so flavourful, the spices really do hang around for a while. It's a lovely dram, and I'd like to hear from others who have tried this. #WeAreBimber

🏁 - Spicy, and quite long. That syrupy thickness is lovely. Black pepper and lots of stewed dark fruits continue, along with a sweetness, like caster sugar. #WeAreBimber

👅- Jeez that's bold, there's so much flavour here. The peat is easily found, along with loads of stewed dark fruits, cherry drops, black grapes, dandelion & burdock. It feels juicy, quite thick, like fruit syrup. #WeAreBimber

👃- First to arrive is the peat, it’s like sweet germoline. Strawberries and cherries, and dusty leather come next. Cherry Bakewell ice topping, stem ginger, and Sherry-soaked Christmas pudding, it's a big nose. #WeAreBimber

Right, time to try this, The Witch Cask, Ex Sherry cask #476 @ 57.3% abv. This is the most recent limited release, and sold out very quickly. This Single malt is Peated. This is the 21st @bimberdistillery.bsky.social I have tried, and the 994th whisky I've tasted #WeAreBimber #1kdrams.

Thoughts - If I’m correct, there’s more single malt in old Teachers than today, and that shows. I was surprised by range and depth of flavours, and it did develop some. A while after the last sip, wet cardboard came through, with some drying. #olddrams

👅 - Oh! It’s rather spicy! More like FFB spices, but there are also spices you’d expect from a sherry cask dram. I’m finding grapefruit and pomello, bitter lemon and sherbet, then ginger and cinnamon, cough syrup, Victoria plums, and those spices do linger #olddrams

👃- It’s quite an easy nose initially, with green apple skins and pear drops. Slowly wood and spices come to the fore. Linseed oil, vanilla and Pva glue. Interestingly, there are red berries lingering in the background, teasingly. #olddrams

My mid working week dram this week is this, from Whisky Pioneer, and the 2nd Fielden I would have tried. This is the 990th dram I’ll have tried. My countdown to my 1000th dram has started 🥃 @summertonclub.com
