Nice article. As it noted, many of the trees in Sacto are remains from orchards, and those are good to eat. And many planted as urban trees are of the Sevilla variety, and those are really sour. I tried one of the street oranges here in Valencia, and it was indeed horribly sour.

These are sour as a variety - it's not weather based. It's to prevent people from creating conflict over collecting them for food.

I got first exposed to za'atar by my Israeli friends Roni and Meirav like 25 years ago! Don't use it much, but I love it!
