Though and you would need latex gloves for it, Sculpey Air Light clay is great for plush doll clay faces, carves beautifully along with shading. Down side is that it's very soft and would need to be pre baked a few times to avoid warping. Its also very much like marshmallow fluff in texture.

If you want, there is a way to revive the clay to being soft again. Kneading in baby oil tends to help soften the clay into being workable. (It's the same issue I run into with Fimo, Fimo is always rock hard when unpacking. Baby oil really is a life saver)
