I ended up throwing some mushrooms in. Omg this was amazing. It was like a chunky and thick veg soup. I did some sausages to go with it.

When you have a load of veg that’s starting to look a little sad for itself in the fridge you simply need to get it used. Throw it in a pot, throw some seasoning and stock together and get a little stew going.
