Breakfast Mini Quiche

Field Roast Vegan Sausage cooked and finely chopped. Violife shredded cheese. Just Egg—16 ounces whipped. Finely chopped bell pepper. Soft corn tortilla as directed in the recipe below. Of course, Miyoko’s Butter. Delicious!

Puffy Tacos Vegan Style

Gardein Crumbles with taco seasoning and your preferred heat, with chopped jalapeno, are a perfect mix. Then, I used Violife Mexican shreds and fresh cilantro from the garden. You can make these delicious corn tortillas however you prefer.

Fried cabbage and red potatoes are perfect for a rich, savory side dish or entree. Combine Miyoko’s butter, chopped onion, and garlic for the base. Then, top the potatoes with plant-based milk—optional: vegan Field Roast Italian sausage.

Delicious adjustments using Miyoko’s Butter, Bob’s Red Mill Egg Replacer, and Oatly Oat Milk. Baking times can vary depending on the oven or the substitutions made, so I extended the baking time until the rolls reached an internal temperature of 210°F.
