A hobbyist maker of fermented hot sauce for my family and friends. Join in for recipes and what I found works and doesn't work, or just for the quirky names we come up with for our little bottled treats.
One sample from about 1/2 of this year's #hotsauce batches, 2 month #ferment. Unfortunately lost batch 132 to contamination. Nice range of flavours & heat. Fruity to savoury, medium-low to scorching. Most #chilis from Canada Linc Farms. Some from our garden.

I am so woefully weak. Walked into an Asian market for anything but #hotpepper, walked out with these. Labeled as ghost but obviously not. Each tray had a mix of yellow, red & beautiful chocolate pods. A mix of Scotch Bonnet, Habanero and some hotter stuff. 1.5 lbs or so for $10.

The start of "Onion to Rule Them All", 2025 edition, the best #hotsauce we make regularly. This year is #scotchbonnet, with onion, garlic, dragon fruit and mandarin orange. Will bottle after a 2 month #ferment.

Pink Tiger x Bhut Jolokia Peach, or so it was labeled. With the luck I've had with mislabeled plants this year it could be anything. Whatever it is it's coming along nicely & looks like it will be fun to have a sliver, for a definition of fun that many won't share.

Naga Twist #hotpepper pods, 1 week after my previous picture. Some are showing deep, angry red in the right light. I'm glad I resisted the impulse to pluck these, otherwise I would have missed such a gorgeous colour change!

11th and last batch of #hotsauce with peppers picked from Canada Linc Farms. 1 gallon of red hot peppers, garlic, onion, ginger, chayote and jade melon. A bit shy of 2 weeks in the #ferment.

If my math is right, this is over 25 litres on the go from that day of pepper picking.

Some lovely/dangerous looking pods that were mislabeled or didn't breed true. These were meant to be giant chocolate ghost but are obviously peach. Disappointed, but not too much given how many are coming in & how beautiful they look.

Destined for #hotsauce.

Lovely (and dangerous) looking Carolina Reaper from our garden. It says "don't dare eat me", but I'm silly enough to ignore it. It, and its friends, will be made into one of our more challenging sauces.

9th batch from the #hotpepper haul from Canada Linc Farms. This is another experiment. The cubes & boiled taro with a bunch of red hot peppers, with some nutmeg and cumin seed. Most of the taro will be mashed into something resembling #poi. About 1 week into the #ferment.

The aptly named Aji Confusion #chili pepper. Lovely little pod that's not sure what shape it wants to be. First time growing these. Will eventually find its way into a lovely #hotsauce.

Continuing with the #hotpepper haul from Canada Linc Farms, this is our 7th batch. #ferment is a week in. This is yellow lime, onion, carlic, prickly pears, sumac berries & the superhots we were able to pick, including the gnarly pepper that tapped me out recently.

6th batch of #hotsauce using our Canada Linc Farm #hotpepper haul. This with orange peppers, lotus root, lily bulb, garlic, onion and 5 spice powder. Just under a week in, with some nice activity.

Naga Twist #chili peppers, about ready for harvest. Plant purchased from The Hot Pepper Lady, a seller with unmatched enthusiasm for chilies.

The planned #hotsauce for these will be black garlic, dried black lime & likely squid ink. Maybe purple yam. Whatever makes it dark as night.

Batch 5 from the haul we picked at Canada Linc Farms. This time we've used many of the orange #hotpepper with carrot, ginger, and cumin seed. Not quite a week in at this point.

Batch 4 using the #hotpepper haul we picked from Canada Linc Farms. This uses some of the orange peppers we gathered, along with Ginseng Fruit (aka Pepino Fruit, not related to ginseng at all) and ginger. A few days in with some nice bubbly activity.

3rd batch from the #hotpepper haul we picked at Canada Linc Farms. The "peach" coloured peppers this time, with mango and more proper ripe yellow limes. A few days in. Some nice bubbling action going. Looks like I may need to fish out a floater though.

Second batch of #hotsauce fermenting from the peppers we picked up at Canada Linc Farms. These are the yellowest #chili peppers of the lot, along with some proper ripe yellow limes, in 3.5% brine.

Experimentation Time! Chocolate Habanero peppers freshly picked from Canada Linc Farms. Fermenting with fresh cacao beans & black lime.

The Plan: After fermentation, clean the cacao beans, roast them and then grind, adding back to the sauce at blend.

Had a bit of vacation time, coincided with taking youngest back to university, then down to the London, ON area to visit Canada Linc Farms for some Pick Your Own #HotPepper fun! Too early for #superhots. Fantastic Hab & Hab Adjacent peppers ready! Return visit planned! Lots of sauce on the way!

First flowers. Lovely colour. Dragon's Breath (at least that's what the vendor said the seedling was, and I trust them). First time growing them. I hope the peppers are as nice as the flowers. On another branch is a teeny, tiny pepper. So Happy!

A 2 for 1 #hotsauce set today, both mild & tasty, from the same base batch of jalapeño, onion & garlic in a 2 month ferment. Bottle ½ with brown sugar. Use the other half in a colour experiment that doesn't quite get the result but still looks great. Garlic forward, Purple Rain has earthy notes.
