For me credibility has to be based on the truth but believability is loosy goosy.

Similarly if someone is predisposed to not trusting people running the goverment, a creator with a similar disdain spousing anti vax theories will seem believable to them.

My theory audience has certain beliefs and when a creater echoes those beliefs they are seem as believable. I like science and I know you do too so for me you are a believable source of information.

I read through the blog post and I don't see the issue. You are not talking about a diet, fat gain or loss. I would say it would affect anyone with different dietary preference way more than anyone with an eating disorder.
