Baked Cheese on Toast with Wine 2 cups grated Gruyère or Emmentaler 2 eggs, lightly beaten ½ cup dry white wine 4 slices country bread or wheat bread 2 tablespoons butter Dash cayenne Preheat the oven to 400 degrees F. Mix the cheese, eggs, and half the wine and spread the mixture over the bread. Melt the butter in a heavy skillet large enough to hold all four slices. Swirl in the remaining wine, then settle the bread into the pan. Add cayenne. Bake until the cheese melts, 12 to 15 minutes.

It was no different with The Deer Hunter. Thom Mount told me that another actor, Roy Scheider, had originally been offered the part of Michael and had accepted it. Sid Sheinberg, the powerful CEO of Universal, wanted him because he had just starred in the most successful movie Universal had released in years—Jaws-and might act as a good-luck charm in this difficult-to-market movie. Sheinberg was used to getting what he wanted-his wife, Lorraine Gary, a minor TV actress, had been shoehorned into Jaws to play Scheider's wife. Cimino, who, with Carelli's help, always had a sure eye for cast-ing, was less convinced. Within weeks, Scheider was gone. He said he left the project because he disagreed with the ending—he did not want his character, Michael, to travel halfway across the world to Saigon to rescue his friend, only to have him kill himself. Thom Mount said the reason was much simpler than that: ever manipulative, Cimino made it clear that he did not really want Scheider, and the actor was unwilling to be in a movie under those circumstances. The resourceful Universal allowed him to pull out on the condition that he did Jaws 2, which he had originally turned down.

Technically this was a rewatch, but I hadn't seen it since high school, when I failed to recognize just how great it was. It's amazing how *new* this movie feels nearly 50 years after its release—the musical sequences are revelatory, Roy Scheider is brilliant, and that ending hits hard.
