It wouldn't surprise me if human writers who've used em dashes for years — myself included — are adjusting their writing style as a defense mechanism because of the AI-induced em dash chill. I used a semicolon recently while rewording a sentence to eliminate a perfectly good em dash. 😐

Feeling weird is reasonable; opting out is also reasonable. Perhaps consider your relative comfort levels with: (a) feeling low-grade weird until you can have an outdoor lunch again, vs. (b) a ~0.5% chance (per similar indoor event) of a significant/costly illness of unknown duration. I like (a).
