I made a vegan dinner. A riff on sausage and beans with mirepoix, mushrooms, and kimchi. Served over rice. Seasoned with salt, parsley, tarragon, an unholy amount of crushed red pepper, some black mustard seeds, and a bit of danajiroo (a 50/50 blend of coriander and cumin.) #seaincooks

Me and my violin. A full size made in 1967. I learned after only one year with it, long ago, that gold-plated E (E Goldstahl) sounds sweeter on this instrument than does a steel E string. The other three strings are gut.

#seaincooks Japanese Milk Bread, with an overnight rise in the refrigerator. So very fluffy, deeper flavor than without the overnight rise. Toasts nicely, as i care about toasting a lot.

This evening, #seaincooks bread. These loaves:

500g 00 Flour
250g Pumpernickel Flour
60g Wheat Gluten
25g Sugar
12g Salt
12g Instant Yeast
6Tbs Butter
2 Lg Eggs
~600ml warm water
Mixed w/ dough hook in mixer for ~8min. Let it bulk rise & came out cleanly from the ungreased bowl. 350F for 40min

Good morning. #seaincooks caramelized mirepoix with parsley and egg, with Japanese iced coffee via a slightly different method than i had been using. I got about 2-2.5h sleep i think. Goals today:a bathe, take glass to recycling bins, and hopefully some laundry. May your week be off to a good start.

This soup:
5C of kelp/anchovy broth
0.5lb shells pasta
1 sm onion coarsely chopped
2 md carrots, chopped to cook by boiling in ~ 9min
1C celery, similar chop to carrots

Bowl finished w/: soy sauce, sesame oil, & Old Bay Hot.

Total American fusion deliciousness.
