What do you get when you combine good German sausage with French style bread and South American vegetables? A "Completo" (Chilean hot-dog). This is a Italiano type, with diced tomatoes, mashed avocado and mayonnaise. History in ALT. My regards to @francescabrooks.bsky.social

A staple of finger food in Chile, a "Completo italiano" is almost a full meal in itself. It's the most popular type of completo, and it has nurtured at low cost many generations of college students without the means or the time to access a more proper meal. There are different ingredients for completos: sauerkraut (called "chucrut" in Chile), salsa americana (a type of finely minced giardiniera), salsa verde (onion and cilantro), and others. The most important aspect of Chilean completos is the quality of the ingredients. Good sausages and bread are a must. Chileans, when they visit the USA, refuse to eat the unappealing, over-processed offal that is presented as hot-dogs here. An actual quote from a Chilean visitor: "The humblest completo from the poorest gas station in Chile is better than any hot-dog you can find in the USA". I'd have to agree. To make Chilean completos, you must find high quality sausages, the fewer preservatives and extraneous chemicals the better (tip: they are never cheap). As for bread, good sub buns will work, especially if they are brioche or a similar French type; even a good baguette will do in a pinch. For the basic garnishes, try tomatoes (finely diced), mashed avocado with a pinch of salt and a splash of olive oil, and good mayo (home made goes incredibly well). Other than Italiano, my favorite garnishes are sauerkraut with mayo and Dijon mustard. A close-up of a Chilean-style completo italiano. In my teen years, I had cheap clothes. They didn't last long, and I had to buy frequently. Now I have better clothes. They last a long time, so I don't buy often; they go out of style soon.

But fashion is cyclical. If I wait long enough, my old clothes will be fashionable again.

A relatively simple dinner tonight (no, it isn't cat): chicken with vegetables and mashed potatoes. The chicken stew borrows from the coq au vin recipe, with the pieces marinated in white wine and herbs for a few hours before sautéing. Also, I didn't have bacon, so I made do with beef fat.

A white round plate with a meal of mashed potatoes, vegetables and chicken, topped with some cilantro leaves. The vegetables are carrots, red and yellow peppers and some almost transparent onion pieces. The sauce from the stew surrounds one side of the mashed potatoes, creating a narrow sea of deliciousness. Aye aye, captain! An unplanned dish which made use of the things I had at home, chicken and vegetables and leftover white wine. Oh, and a lot of potatoes. Potatoes are excellent. You can boil them, mash them, stick them in a stew. Lovely big, golden chips with a nice piece of fried fish... but I digress. If you ask me, the key to this dish is adding flavor from different sources (herbs, olive oil, animal fat, wine) without any one overpowering the others. That, and being ravenous after a hard work day, either on the fields, as our ancestors did, or on the keyboard. A close-up photo of mashed potatoes, vegetables and chicken topped with cilantro. A tabby cat sleeps at the center of a dinner table in a house. Why did she select such a place? There are no certainties, although it may have to do with the smells of past meals served on said table. Hearty fish soups, creamy pastas, sizzling grilled meats, warm and crusty breads, all create an unavoidable attraction for the furry individual, who may be dreaming of epicurian feasts of times gone by. She's not without discernment about foods, though: she may eat bugs and weeds, but will draw a line on eating salmon that has not been properly sliced to her specifications, or beef that is inadequately seasoned. Our time on this Earth is limited, and one ought to make it as endurable, nay, enjoyable as possible, affirms the sybaritic feline.

1. Is it useful? Will it help anyone in any way?
2. Is it interesting? Will someone learn anything?
3. Is it fun, without being too offensive?

If it checked any, my post was good to go.
