I've been seeing this everywhere, thanks to M&S selling these. I thought I would give it a go, since it seems fairly simple to make.

This month I have chosen to do Loaf Cakes.
I added Prunes & Apricots, as they work so well together. Again substituted eggs with flaxseed eggs. Loved adding the coffee granules to this, it does give it an extra kick.

Last Pride Baking and cannot beat some cupcakes.
They turned out well. The colours are more vibrant once you look inside the cupcakes, so happy with that. These came out fluffy with a vanilla flavour. The sprinkles make them even better.
