The metastable nucleation of graphite is a spectacular manifestation of Ostwald's step rule and is driven by density differences between the solid and the liquid phases.
In brief, we see spontaneous nucleation of either graphite or diamond when quenching liquid carbon at pressures between 5 and 30 GPa. Surprisingly, graphite also crystallizes at conditions where diamond is the thermodynamically stable phase.
