Slice about 5mm thick, saute in butter until soft, add vinegar and fennel seeds in the last minute or so.
Or shred it really fine and add it to ground pork for dumplings.
If it's napa cabbage specifically, make your own kimchi!
I made a batch a while back and it was glorious.
