Baked /. roast celeriac might be a winner. Nice big chunks, along with other veggies. Dials down the strong celery flavours, goes nicely caramelised around the edges, soft in the middle. Yum.

I'm pretty sure it was when I was reading Weirdstone decades ago that I nearly had a panic attack due to the vividness of one particular scene. I won't offer any spoilers, but... Yeah. Still gives me the willies.
