Had some eggs and potatoes I needed to use up so a Tortilla Espanola was the move to start the weekend. Don’t tell my Spanish friends but the hack here is to air fry it in a springform pan for like 10-12 minutes at 400. Saves the messy and risky flipping. Comes out perfect every time.

Back to the cooking grind. Supreme de poulet a la moutarde is the move tonight. I love this dish because it requires minimal effort/time, very few ingredients and packs incredible flavor.

Saw this on Food Network recently and decided to try it tonight. Add some everything bagel seasoning to the panko before shallow frying the chicken cutlets. Was worried about salt level but actually should have added more. Nice little flavor hack.

Tonight’s cook: Stuffed acorn squash - a highly underrated ingredient - with chicken sausage, onion, garlic, fennel, apple, sage, oregano and Parmesan. Simple, healthy and delicious.
