That’s the Christmas cake baked. It’s made with the usual dried fruit, but with the addition of dried apricots, orange, stem ginger, almonds and lashings of Cointreau. I’ll feed it more Cointreau between now and Christmas Eve.

A friend of mine, who has a very sweet tooth, is carb-loading this week in preparation for HYROX on Saturday. I’ve made him some muffins based on traditional British desserts: sticky toffee pudding with roasted pecans and cherry Bakewell tart with a Morello cherry filling.
