What I did different today: today after bulk ferment i did a fairly rigorous stretch/fold, and then again after dividing it into 4 pieces. Pretty chuffed with the results!

Can’t stop won’t stop. Today’s dough behaved nicely, I fed it 2.5 hours before first mixing and that seems to be ok? Yay breb!

My son is so gassy. Sometimes i wonder if he’s more gas than boy, and then i remember that on a long enough time scale we were all gas (and some still are!)

Today’s experiment: sourdough loaves but normal style, none of this shokupan fancy “three buns in a tin” mess. Fingers crossed!

Made some more these babies but, in a bout of late night stupidity, scored the tops which ultimately deflated them somewhat. Today i’m gonna try just regular loaves, none of this “3 buns one tin” bananas.

New bread experiment: sourdough loaves, but make em shokupan style. For a first time try I’m pretty smug about how these turned out.

10/29(?) i am fighting with my oven for color. I think i might have a way through. It involves remembering to use the broiler.
